Base Ingredients:
75 grams butter
1/2 teaspoon cinnamon
1 1/2 cups plain sweet biscuit crumbs (I use "Milk Arrowroot" and "Malt" biscuits 50:50)
Filling Ingredients:
2 x 250 grams of cream cheese
1 litre vanilla ice cream
1 cup of jam (I use boysenberry but any flavour you like is good)
Base: Melt butter in a saucepan. Remove from heat and add cinnamon and biscuit crumbs. Mix well. Line the base and sides of a springform pan with the mixture and chill while preparing filling.
Filling:Beat creamcheese until light and creamy. Soften ice cream with a fork. Gently fold ice cream into cream cheese until well blended. Mix jam with cream cheese/ice cream mixture.
Smooth top and cover with Glad wrap. Freeze overnight. 30 minutes to 1 hour before serving remove from the freezer.
